Have your CUP’CAKE” and eat it too!
Sometimes you just need to have your cake and eat it too! After experimenting in the kitchen with my daughter the other day, we came up with this cupcake recipe that is not only “Rita Friendly”- yes, I ate 2, and felt no remorse, no bloating and not sugar crash (there is no sugar). The great thing was that my daughter loved them, and so did my husband! Eat them at room temperature and the frosting will be nice and creamy. Alternately, my hubby likes them right out of the fridge in which the frosting is hard like a fondant! Perfect for Easter! Let me know how you like them!
ARIANA’S CUPCAKES (Makes 12)
1/2 cup organic coconut flour (I like Let’s Do…Organic)
3 eggs
4 egg whites
2-3 scoops of your favourite vanilla protein (I LOVE truPERFORMANCE truRecovery)
1 cup unsweetened almond milk or coconut milk (in tetra pack)
1 teaspoon pure vanilla bean or extract
1 tablespoon baking powder
Mix all ingredients in mixer until batter is formed. Line 12 cupcake tins with liner and fill with batter. Bake in 350 oven for approx. 20-25 min. Let cool before frosting.
FROSTING
1/2 cup coconut oil (room temperature)
1 tablespoon of powder stevia (or honey, maple syrup)
2 tablespoons pure organic cocoa powder
2 egg whites
Mix all ingredients in mixer until frosting is formed. Spread on cupcakes when cooled! Enjoy!
